Take your pick from any of the plates weaving their way through the restaurant on the conveyor belt or order items fresh from the kitchen, including sashimi sets and large sushi platters.
As in most sushi restaurants, the tuna is the biggest draw, and at Hyotan it is succulent and a deep maroon. You can opt for the richer, fattier cuts of chutoro or ootoro, but the regular maguro is highly recommended.
